An easy and quick dish, perfect for any meal. This classic omelette combines beaten eggs cooked to perfection, optionally filled with your choice of cheese, vegetables, or meats.

Ingredients

  • Oats

  • Leavening agents

  • Vegetable oil

  • Milk

  • Brown sugar


Instructions

  1. First:

    In a large bowl, stir together the oats and milk. Let stand for 10 minutes.

  2. Heat the pan:

    Add the brown sugar, oil, and eggs to the oats and milk.

  3. Cook the omelette:

    Stir to combine.

  4. Add fillings (optional):

    In a medium bowl, whisk together the flour, baking powder, cinnamon, baking soda, and salt. Then, add to the wet mixture, stirring together until just combined.

  5. Fold and serve:

    Divide the batter among the paper liners in a 12-cup muffin pan.

  6. Enjoy:

    Sprinkle the tops with extra oats or coarse sugar, if desired. Bake for 7 minutes before lowering the heat and baking for another 12 to 15 minutes. Let the oatmeal muffins cool in the muffin pan for a bit before transferring to a wire rack to cool completely.
